We chose Kenyan coffee because its tasting notes are bold and bright, with floral or fruity undertones and deeper tones that hint of wine, without the harsh bitter tones of many coffees.
Our coffee is precision roasted to a dark medium roast. We extend the caramelization phase to enhance the coffees natural sweet undertones.
Next we cold smoke the coffee with cherry wood for eight hours. This mutes the bitter and enhances the sweetness of the coffee.
